Harlow is reaching the awesome age of loving all things girl, and I'll have to admit - I love it too. We are now approaching the super fun stage of me living vicariously through her amazed little eyes with everything glittery, magical and topped with sparkle. This year Santa brought Harlow a Poopsie Unicorn. Since then, the obsession with unicorn poop had begun.. because if you hadn't heard, unicorns poop rainbows. This recipe was super simple so it wasn't hard for the little ones to help. I can't take credit for the creation (pinterest find) but I tweaked it a bit for more pastel colors/cake batter, because who doesn't love pale pinks and purples?
RECIPE:
1 package of white cake mix
1 box of ice cream cones
1 cup water3 eggs
1/3 cup vegetable oil
red, blue, yellow and green food coloring
2 sticks butter
1 tsp vanilla
1 tbsp milk
2 cups powdered sugar
Preheat oven to 350 degrees.
Combine your cake mix, water, eggs and oil into a bowl and mix together for two minutes at a medium speed.
Separate cake batter into three bowls for three colors (or amount of bowls dependent on the number of colors you are using.) Add red, green, yellow and blue food coloring separately to each bowl to create different batter colors.
Set your ice cream cones into a cupcake/muffin tin and alternate colors into each cone until you have approximately 1 inch remaining from the top (which allows for the cupcakes to expand while baking.)
Place cupcakes into preheated oven for approximately 20-25 minutes. Cool completely before icing.
For icing, add your butter into your mixture beating at medium speed until fluffy - then add your vanilla, milk and sugar.
Cream together on low until it's all mixed and separate into individual bowls and add coloring to get your perfect color. (I used pastel pink, purple and turquoise.)
Fill your three piping bags, place into coupler to create one frosting tip/bag. Swirl and frost cupcakes, adding glitter or gold shimmer dust to create your magical unicorn poop.
