We met some friends Friday night at The Crafty Jackalope and I ended up ordering some incredibly good fish taco's (I highly recommend eating there, the food is ridiculously delicious in addition to the atmosphere) and have had a craving for some since.
I found this Pinterest recipe and got all my ingredients at Fresh Thyme considering the recipe was pretty simple. I tweaked it a bit for lower calorie and truly, the lime crema sauce makes the meal so don't skip it.
INGREDIENTS:
(lime crema)
1/4 cup low fat sour cream
3 tbs light mayo
1 tbs fresh squeezed lime juice
zest from half a lime
1/4 tsp salt
(slaw)
any bagged one you want
1/4 cup chopped cilantro
(fish)
1lb fresh fillet tilapia
1tbs EVOO
1tbs lime juice
2tsp cumin
2tsp paprika
1/2 tsp red pepper flakes
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
(taco)
soft shells
fresh avocado sliced
Preheat your oven to 475 degrees and once heated, let it be for a half hour.
I snagged this bag of organic slaw at Fresh Thyme and just added some cilantro to it. It had cabbage, broccoli, kale and carrots. Set this aside once mixed.
In a small bowl whisk together all the crema ingredients, then store in fridge.
In another small bowl, mix your EVOO, lime juice, cumin, paprika, red pepper flakes, garlic powder, salt and pepper then coat the top side of your fillets. Once oven is ready pop them in for 10 minutes.
(Tip: Line your baking tray with foil and spray with non-stick spray before placing fillets)
Once Tilapia is cooked, remove from oven to a plate using a fork to break them into smaller pieces. The fish should be super tender and flake easily otherwise you screwed up my friend.
I heated all my tortilla shells on the stove, threw down some slaw then topped them with tilapia, lime crema sauce and sliced avocado. Bam. Super easy.
What also rocks was running out the door shortly after baking and eating to take Harlow to dance to find Jesse had cleaned off and up all the dishes as well as my kitchen mess. Brownie points for you handsome man of mine.

Oh shit, I almost forgot calories. One of these heavily stuffed taco's is just 280 calories. Serving size of 5. You technically could have more servings therefor lower calories per taco but I like mine pretty full. Like bite into it, stuff falling out of your mouth and hand onto your plate kind of full.
